We are delighted to welcome Steven Edwards, former winner of BBC MasterChef: The Professionals 2013 and his business partner Josh Stanzl who together created and run etch, to guest chef and lead The Latymer team throughout February.

Offering a series of exclusive dates, Steven and Josh will be bringing their love of local seasonal ingredients to The Latymer, having developed simple yet elegant 6-course tasting menus specifically for our award-winning Surrey restaurant.

Etch Food - Steven Edwards and Josh Stanzl A Familiar Face

Steven is a familiar face at Exclusive Hotels & Venues having worked as Head Chef at The Camellia restaurant within South Lodge before launching etch in 2014.  Sussex born and bred both Steven and Josh are passionate about using locally sourced, quality produce to create elegant, award-winning food that celebrates the freshness and simplicity of each unique ingredient and transforms them into spectacular dishes.

Steven said ‘I am honoured to have been asked to be a guest chef at Pennyhill Park and am really looking forward to bringing my food to diners at The Latymer’

Seasonal dishes

The menus perfected specifically for The Latymer will include dishes such as:

 

  • Cured & flamed line caught mackerel, roast celeriac, pickled celery
  • Coffee glazed duck breast, pressed leg, artichoke puree, roasting juices
  • Fillet of Petworth pork, slow cooked celeriac, mustard and Twineham Grange doughnut, crispy kate, broccoli puree, gherkin.

The menu offered each evening will be 6-courses at £65 per person

Or during Valentines week at £80 per person
